Buffalo Chicken Meatloaf

I was so hungry I forgot to take a picture of it. Ha ha ha! This is another recipe we had for dinner out of the Biggest Loser Family Cookbook. I didn't serve it to the kids just because it's a little spicy. Kurt and I really liked it though, I love buffalo chicken and this meatloaf is a quick easy meal.

Ingredients:

Olive oil Spray
2/3 c old fashioned oats
1/2 c fat free milk
2 1/2 Tb buffalo wing sauce (I used Franks red hot cause I + it)
1 lb xtra lean ground chicken
1/2 c finely chopped celery
1/4 c shredded carrot
1/4 c fine chopped sweet onion
2 lg egg whites, lightly beaten
1/4 t salt
2 oz crumbled reduced fat blue cheese (I used reduced fat monterey jack, I'm not into blue cheese.)

Preheat oven to 350 mist a bread pan with the olive oil spray.
Combine the oats and milk in bowl and let stand for 3 mins until the oats begin to soften. Stir in the wing sauce until well mixed. Add the chicken, celery, carrot, onion, egg whites, and salt. With a fork or clena hands mix the ingredients. Add the blue cheese and gently mix to combine.

Transfer to your bread pan and spread so top is flat. Bake for 35 to 40 mins. Cut into 8 slices.

Makes 4 servings
Per serving: 263 calories, 35g protein, 14g carb, 6g fat
