Ya that's right....straight from the Biggest Loser cookbook! I shouldn't be surprised anymore when I try one of these recipes because they never cease to amaze me and ALWAYS taste so yummy! Tonight for dinner I made this Southwestern Chicken Pileup. Now it's not exactly kid friendly, at least for my kids anyway. They didn't like it but I did try and give it to them. :) I thought it was really good, and Kurt will taste it when he gets home but he's not exactly hard to please so I'm sure he'll love it too. Tastes Great and Low Fat, I'm always in! So I thought I'd share with all of you. You're going to need:
Salt free mexican or southwest seasoning- (I used Mrs. Dash southwest chipotle seasoning)
Garlic Pwdr (left it out, this baby belly doesn't like it)
2-3 bnls sknls chkn breasts
whole wheat pita pockets
Hummus, preferably roasted red pepper flavor (I've never had hummus before and I LOVE it!)
1 can black beans, drained
red onion strips (eew,not a raw onion fan so I left it out)
red bell pepper strips
chopped fresh tomato
chipped fresh cilantro
Shredded cheddar cheese (if desired)
guacamole or fat free sr crm (optional)
Alright here's the step by step:
Preheat oven to 450F. Preheat a grill to high.
Sprinkle the seasoning and garlic pwdr evenly over the chkn breasts. Grill chicken till no longer pink. Chop into bite size chunks and set aside.
Meanwhile, place the pitas on the grill and cook for 1 to 2 mins until lightly toasted. Place pitas on baking sheet, spread evenly with hummus. Top evenly in layers with the beans, the chkn, onion, red pepper, tomato, cilantro, and cheese.
Bake for 6-8 mins. Let stand 5 mins and slice each pita into 4 wedges. Top each pita with sr crm or guacamole if so desired. Now Enjoy!
Each full pita is one serving, you may be thinking that's not alot of food but trust me their filling! Here's the nutritional stats per serving:
