Tomato, Basil, Cheese, oh my gooey goodness!

Tomato Basil Pizza is good, but the regular way ain't got nothin on this! ;)
I found this little Tomato Basil Pizza showdown on PW's site (aka- Pioneer Woman, for those who aren't acquainted, my suggestion is do it!) She had a question of which form of Tomato Basil Pizza would be the winner. The traditional way, using basil leaves, or the new way using pesto sauce. Personally, I LOVE pesto sauce!(Her winner was the pesto version as well) So be brave and try this out, it's so worth it!!

Ingredients:
Prepared Pizza Crust (either homemade, store bought, whatever floats your boat)
Jar of prepared pesto sauce
Fresh Mozzarella (yes there is a difference, that big block of cheese you're eyeing...slowly put it down and back away :)
Roma Tomatoes
Grated Parmesan Cheese (optional)

Easy as pie. Spread the pesto onto your prepared crust, generously if you must. Next add some fresh slices of those romas, then slice that mozzarella and place the sliced rounds on top. Want a little extra pizazz? Sprinkle a little fresh grated parmesan cheese. Bake for 15 mins, or until cheese is melted to perfection. Now cut yourself a big ol slice and enjoy!! (Your taste buds are singing aren't they?!)

Just in case your lost in the way of pizza crust making and you're about to buy that boboli crust at the store. I promise this crust recipe is super easy, and very yummy. (This is my fave crust recipe, most of the time I don't have all day to let it rise over and over so this recipe is for you busy Moms who just want some homemade crust w/o the hassle)

Basic Pizza Crust
1 package active dry yeast
1 cup warm water
2 Tb veg oil
1 t sugar
1/4 t salt
2 1/2 - 2 3/4 c flour
cornmeal (optional)

In bowl dissolve yeast into the cup of warm water. Add the oil, sugar, salt, and 1 1/2 c flour. Beat until smooth. Stir in enough remaining flour to form a firm dough. Turn onto a floured surface; cover and let rest for 10 min.

Roll into a 13 in circle. Grease pizza pan, and sprinkle w/ cornmeal. Transfer dough to prepared pan. Bake at 425 for 12-15 mins, then add toppings of choice and bake an additional 10-15 mins longer. Voila!!
